The kitchen offers dishes linked to Piedmontese tradition, revisited by the chef, using local products linked to seasonality.Typical products such as the White Truffle of Alba, in the period from mid-September to December, and the Black Truffle in the rest of the year; Tuma di Bossolasco, Murazzano D.o.p. cheese, Nocciola Tonda Gentile delle Langhe, the various types of potatoes of the Consortium Patata Alta Valle Belbo, to the meat, from the Fassona breed, which has a tenderness and leanness that allows for the preparation of excellent hors d'oeuvres and main courses.
Traditional appetizers from Vitello Tonnato, to the bar of raw meat, to the caramelized sausage with chestnuts of Cuneo and Nebbiolo, peppers with bagna cauda, and in autumn the fondue or poached egg with a grated White Truffle and mixed Piedmontese fried.
